- High levels of antioxidants are found in artichoke which includes silymarin, rutin, anthocyanics, cynarins, quercertin, luteolin, and cynarin. This vegetable is ranked seventh in the study of antioxidant levels. It contains more antioxidants as compared to any other vegetable.
- Pulp made from the leaves of artichoke contains a polyphenol antioxidant known as cynarin. This antioxidant is responsible for the increase of bile flow and is very beneficial for the liver. It is capable of regenerating liver tissues.
- This natural diuretic, aids in digestion and also improves the function of the gallbladder.
- The leaves have the ability to reduce the cholesterol. This happens as the active compounds in the leaves inhibit the HMG-CoA reductase. It also increases in the good cholesterol in the body.
- One large artichoke contains about the quarter of the daily recommended fiber intake. Fibers are helpful in reducing the time of contact of toxic substances to the colon hence reducing the chances of developing cancer.
